Sensory modulation: sweetness, colour and balance

For this reason, selection should be carried out through application trials and not only based on the Brix degree or the colour of the raw material.

Phenolic compounds: another formulation variable

Red juice concentrate grape solutions may contain phenolic compounds from the skin and other parts of the grape. Their concentration and composition vary depending on variety, ripeness, process and storage conditions.

From a formulation point of view, this variability can influence colour, astringency, aroma and the evolution of the beverage. Therefore, when these parameters are relevant, they should be checked through analytical specifications, stability tests and trials in the final matrix.

The presence of phenolic compounds does not in itself mean that nutritional or health claims can be made. Any claim must be evaluated on the finished product and in accordance with the legislation of the destination market.
