The vineyard as the origin of quality
We begin the journey by walking through the vineyards of La Manchuela in Castilla-La Mancha. Here the grapes that give life to our grape juice concentrate are born. It is a vast plateau, recognized as the largest vineyard area in the world, where the sun glides for hours between the vine rows, winter’s cool shelters them during hibernation; while the soil, with its unique geology, is wisely generous in offering nutrients to shape the character of the fruit. It is within this unique landscape, with centuries of winemaking tradition, where the grape learned to express itself with unrepeatable authenticity: it ripens more slowly, achieves greater balance, accumulates sugars, natural acids, polyphenols… giving grape juice those sensory and nutritional qualities that continue to conquer markets and palates around the world.
It is precisely this origin that grants us the privilege of working with varietal grapes that make a difference, that are the heart of Manchegan identity, and that offer qualities difficult to find in other latitudes:
- Airén, a luminous and fresh white grape, with juicy and soft pulp, from which we obtain a pale yellow grape juice with fruity aroma and flavor.
- Bobal, a red variety with bluish-black skin and non-colored pulp. Emblematic, with good acidity and centuries of heritage. It gives us a red grape juice concentrate with intense, fruity aroma and dark cherry color.
- Garnacha Tintorera, a unique red grape with colored, fleshy pulp, from which a grape juice of high color intensity is obtained, with aromatic depth, pronounced fruity notes, and a distinctive character.
Here, nothing is accidental. Quality is born at the origin, but it is sustained with honesty, work, and collaboration with those who cultivate the land—who have always been operational pillars of JULIÁN SOLER.
Hybrid model: how we safeguard tradition
At this second stop, we enter our hybrid sourcing model. It is a system that combines raw material from more than 300 farmers and 60 local cooperatives and wineries, together with grape juice production in our own facilities. This alliance is based on long-term contracts, continuous technical support, assistance in adopting ecological practices, fair pricing, and rigorous alignment in quality criteria and standards. It is close, responsible teamwork that achieves environmentally respectful, high-quality production that is economically viable for farmers and allows us to guarantee a stable supply to our clients across the five continents.
At this point along the grape juice quality route, the values planted by our founder are clearly present, based on the 3 Hs: Humility, Honesty, and a great deal of Humanity… Alongside these values, his belief that “the company is the main instrument of service to society.” Today, we are fortunate that those around us have become “infected” with our enthusiasm for the company, for tradition, for grapes.

Traceability: every drop of grape juice tells the truth of its origin: authenticity
At the next stop, we arrive at the warm days of harvest. One more year, a new harvest that brings new challenges, because no two are ever the same. In the words of our founder, “harvest campaigns follow one another, but they do not repeat themselves.” We therefore receive trailers of white and red grapes, each with its own story and effort. All data from the cultivation phase (irrigation, soil conditions, ripeness index…) and from the harvest have already been recorded in our information systems.
Each received load undergoes exhaustive control and is registered with a unique batch code that accompanies the product throughout the entire production process. Additionally, Brix degree control is carried out on each trailer, allowing us to accurately know and control the grape’s ripeness level and, consequently, fruit quality.
The grapes are then quickly processed, and from the first pressing the grape juice is obtained. Of course, everything is executed under the principle of preserving the grape’s full potential and essence. Because “this is grape, and nothing else.” Each stage is monitored in real time by systems that record key parameters.
Grape juice concentration: technology and maximum control
On this journey, a mandatory stop must be made at the grape juice concentration process, a critical point for quality. How do we do it? We extract only two-thirds of the water naturally present in grape juice, using vacuum evaporators that allow us to preserve everything that matters: aromatic compounds, antioxidants, vitamins, natural sugars, and grape nutrients.
This controlled procedure delivers authentic grape juice concentrate. Of course, we constantly adapt to market trends. That is why we have the capacity to diversify qualities and customize grape juice concentrate according to the different applications required by the food, beverage, vinegar, pharmaceutical sectors, and more. What do we produce? What industry leaders need:

At every stage of production, we carry out meticulously scheduled analytical controls to evaluate physical and chemical parameters, perform microbiological tests, and apply sensory testing to grape juice concentrate. This is what allows us to deliver 100% grape juice of premium quality to our clients.
Technical competence is demonstrated through verifiable results. For example, our laboratory has obtained the highest score, excellent performance, in SO₂ analysis.
