White grape juice concentrate: characteristics
Grape juice concentrate is obtained by directly processing the white grapes to extract their juices, before fermentation. It is very light yellow in colour with bright tones and has all the fresh aroma and flavour that characterises this fruit. When this juice is subjected to certain evaporation procedures, the white grape juice concentrate is obtained, a product that also preserves the organoleptic properties of this grape, and offers a high sensory quality, with an intense yellow/golden amber colour, viscous, homogeneous and with a concentration of 65° to 68° Brix.
- White grape juice concentrate is a product that retains all the nutrients, vitamins and natural sugars of the grape, being rich in vitamin C, antioxidants and minerals such as potassium, phosphorus, manganese, iron and calcium.
- The antioxidants in white grape juice concentrate offer protection against heart disease and cancer and prevent age-related eye degeneration. In addition, its nutrients stimulate the immune system and help balance blood pressure.

How we obtain the juice and concentrate from white grapes
Our white grape juice concentrate is made from the Airén variety, the white grape with the longest tradition in Spain and grown in the largest vineyard in the world, in Castilla La Mancha. We carry out a unique manufacturing process, using fresh grapes from our own vineyards, guaranteeing complete traceability and the highest quality of all our products:
- White grape juice NFC (Not From Concentrate), free of SO2. This is the grape juice obtained by extracting and pressing fresh, ripe white grapes (Airén), not from concentrates. After decanting, it is subjected to a process of microfiltration and desulphitation.
- White grape juice/juice concentrate, SO2 free and 100% authentic. We obtain it by processing our white grape juice, through evaporation under vacuum and subsequent filtering. It is a completely natural concentrated grape juice.
- Rectified concentrated must (pure grape sugar). It is a viscous, colourless, odourless and stable liquid. We obtain it by dehydrating the concentrated grape juice from white grapes and eliminating all the substances that compose it, except for its sugars, containing glucose and fructose in equal proportions.
Grape juice concentrate in the food industry and other applications
Concentrated/rectified white grape juice concentrate has various applications in the food industry. It has a high sweetening power, has multiple nutrients, is soluble and 100% natural, which allows the development and production of healthy, high quality and commercially valuable foods. For example, white must concentrate is used in:
- Production of juices, soft drinks, energy drinks and food supplements.
- The production of bakery and confectionery products, syrups, ice cream, etc.
- The manufacture of dairy products, jams and yoghurt, etc.
- The improvement of wheat flour to produce enriched bakery products
